A rich, fresh, very healthy and original dish. The combination of pasta with sardines is not very common but in this case both foods are perfectly accompanied. The pickled sardines are delicious but accompanied with this fresh lemon paste they form a spectacular dish.

INGREDIENTS (4 people):- 16 sardines
- 1/2 dl of vinegar
- 1/2 dl of white wine
- 250 g of spaghetti
- 4 egg yolks
- Bay leaves
- 1 carrot
- 2 lemons
- 2 dl of olive oil
- 20 g of butter
- Black peppercorns
- Salt

Lemon Paste Pickled sardines.


Step 1


Wash, dry and salt and pepper the sardines. Put a casserole on the fire with oil, vinegar and bay leaf. Add the diced carrot, sardines and pepper. Cook 15 minutes. Reserve in the fridge.

Step 2


Put a pot on the fire with plenty of water And a little salt. Add the spaghetti and cook 10-12 minutes, until they are al dente. Remove from heat and drain the pasta in a colander; Reserve.

Step 3


Wash the lemons. Squeeze and grate the skin. Put a saucepan in the water bath with the lemon juice and the yolks. Stir until it thickens. Serve the sardines with their sauce, accompanied by the pasta with the lemon cream.
