INGREDIENTS (4 people):- 2 tangerines
- 1/2 onion
- 2 carrots
- 1 teaspoon of ginger
- 2 scallions
- 1 tablespoon orange juice
- 1/4 cup rice vinegar
- 1 tablespoon sesame seeds
- 1/2 teaspoon sesame oil
- 1 teaspoon of turmeric powder
- 1 teaspoon of honey
Clean and cut the Lombard into thin strips. Peel and thinly slice the onion. Peel and slice the carrots. Grate some ginger.
Salting the cut vegetables and rub with the fingertips massaging for a while. Put all the vegetables in a bowl and place a flat plate with a weight (a can of canned food) to press. Leave in the fridge 3 hours.
Remove the liquid that the vegetables have released. Mix the orange juice, rice vinegar, turmeric, sesame oil and honey in a bowl. Season the vegetables with the mixture. Cut the mandarins and the scallion into wedges and add it to the salad. Serve with black sesame sprinkled on top.
